You are not going to believe how AMAZING these cookies taste… and they’re healthy?!?
Servings: 28 (small) cookies
Nutrition facts- Serving: 1, Calories: 47, Fat: 1.5 g, Carbs: 8.1 g, Protein: 1.6 g

– 1 can chickpeas rinsed and drained
– ¼ cup unsweetened almond milk
– 2 teaspoons vanilla extract
– ¼ cup honey
– 2 tablespoons peanut butter
– 2 egg whites
– ½ teaspoon baking powder
– 1 cup old fashion oats
– ½ cup dark chocolate chips
– Place chickpeas, almond milk, and vanilla in food processor/blender; pulse until mixture forms a smooth paste.
– Pour chickpea batter into a mixing bowl.
– Add honey, peanut butter, egg whites, and baking powder to mixture; mix until thoroughly combined.
– Without cleaning out food processor/blender, add the oats and pulse to a flour-like consistency.
– Stir oats and chocolate chips into batter.
– Drop cookies onto baking sheet (will not spread and will remain soft).
– Bake for 10 minutes at 300˚F

Having anorexia was the worst and darkets time in my life and I wouldn’t wish it on my own worst enemy. If you know anyone who is struggling with an eating disorder please just show them all the love you possibly can and do anything you can to help them get through it.
